Class 1: An Exploration of Winter Citrus
With Dan Keehner, Executive Pastry Chef, USE
Wednesday, February 22nd - 6:00pm - 8:00pm


Join Dan as he explores the use of winter citrus and the importance of acid, bitterness, technique, temperature and their impact on the balance of flavor.  Attendees will have an opportunity to apply their learning’s as they make their own Entremet highlighting citrus and it's complementing flavor.

Class 2: Cooking with Natural Fuel
With Eric Korsh, Executive Chef, North End Grill
Thursday, March 9 - 2:30pm - 4:30pm

In this class, Eric and his team will discuss and demonstrate the nuances of cooking with hard oak and mesquite charcoal.  Participants will be able to see first hand the various flavor profiles they impart on ingredients ranging from beef, pigeon, trout, chilies, chicken, sardines, to clams.

Class 3: Basic Butchering Skills
With Jason Pfeifer, Executive Chef, Maialino
Friday, April 21 - 4:00 - 5:30pm

Jason will demonstrate the basics of whole animal butchery.  The class will begin with a half of a cow from Heritage Foods and learn how break it down into primal cuts and discuss the variety of uses for the remainder of the animal.

Sign up for Understanding Wine

We are excited to share that Understanding Wine class is back! 

  • What: 10-week course, led by USHG Wine Directors
  • When: every Monday from 2pm – 4pm through May 8th
  • Enrollment begins on January 23rd, and is on a first come, first serve basis.  Employees must bring registration form and check to Lindsey at the Home Office to enroll.  

This class is considered an Enrichment opportunity.

For managers with available L&D, this class is eligible as an Education and Development Opportunity.
