Subject: "Naming an Ambitious Goal"
Today, I am writing to name an ambitious and noble goal for USHG, and to invite your ideas, insights and support to help us achieve it. Our first tenet of Enlightened Hospitality is taking care of each other, and while we are pretty darned good at this, I know we can do even better—and we will. Our goal is to take even better financial care of our kitchen and dining room teams, as well as our management teams, while ensuring that a career at USHG provides an even stronger opportunity to advance both professional and financial growth.
The only way to do this is to more transparently define the value of the experience that we – you – provide to our guests. And the best way to achieve that is through all-inclusive menu pricing.
My sense is that the American culture of tipping divides our dining room and kitchen team and stands in the way of our ability to provide financial and professional growth to our entire staff. As a company, we believe that only by including the true and full value of food, service, and hospitality in our menu prices, will we be able to address this inequality and lack of transparency.
How and when we would implement this in each of our businesses is still undecided, but what we do know is that we need all of you to be active participants in defining a solution. I invite you to join me at The Titus Theatre at MoMA this Wednesday, September 16th at 3:00PM or on Monday, September 28 at 10:00AM for a town hall to begin the dialogue. These sessions will be the first of many conversations that you’ll be invited to attend. Additionally, your management teams will be playing an active role within your respective businesses.

For too long, we have lacked the courage to make such a fundamental change. Today starts a new chapter and I absolutely trust in our ability to harness the talent and passion of our people to figure this out together. We have an obligation to be industry leaders when we believe something is this important and I look forward to rolling up our sleeves together to figure it out.
